4-5 lb. hen or fryers
2 cups macaroni, cooked
3/4 cup chopped mushrooms (stems and pieces or whole)
1/2 cup ripe olives, chopped
2-3 cups chicken broth
1 can tomato soup
1 large onion
2 cups cheddar cheese, grated
2 Tbsp fat or cooking oil
Salt and pepper to taste

  1. Boil chicken in salted water until tender.
  2. Chip onions and brown golden in fat.
  3. Add tomato soup and chicken broth.
  4. Thicken to the consistency of a thin gravy.
  5. Cut chicken in medium chunks and add to mixture.
  6. Add macaroni, mushrooms and olives.
  7. Mix well over low heat.
  8. Pour into baking dish and cover with grated cheese.
  9. Bake at 250-300° for 30-45 minutes.
