1 lb. pork sausage or pork smoked sausage, sliced thin
1 small onion
1 cup celery
1/2 cup green sweet pepper
1/2 cup red sweet pepper
1 small can mushrooms
1 can condensed cream of mushroom soup
1 cup Minute Rice, uncooked
1/2 cup cheddar cheese, shredded

  1. Brown sausage in skillet.
  2. Saute chopped onion, celery and sweet pepper in sausage drippings.
  3. Drain in colander to remove excess fat.
  4. Mix all ingredients except for cheese in casserole dish.
  5. Top casserole with cheese.
  6. Bake covered at 375°F for 30 minutes.
  7. Uncover and let brown in oven for 5-10 minutes.
