By Mrs. Warren P. Dufrene. This recipe won won Mrs. Dufrene the title of Outstanding Seafood Cook at the 1969 Oyster Festival.

  • 1 8oz bag spiral macaroni
  • 3 eggs, hard-boiled
  • 1 tbsp mustard
  • 1/2 cup mayonnaise
  • 1 1/2 cup boiled shrimp
  • 8-12 diced pimiento olives
  • 2-3 diced sweet pickles
  • 1/2 cup diced celery
  • 1/3 cup bell peppers
  • Paprika
  • Parsley

Boil spiral macaroni and let cool to warm. Mash egg yolks with mustard and mayonnaise. Mix all ingredients except paprika and parsley, seasoning to taste. Dish over lettuce leaves. Sprinkle paprika and garnish with parsley.
