1lb ground chuck or round
2 Tbsp olive oil
1 small onion, chopped
1/2 bell pepper, diced
2 ribs celery, chopped
2 cloves garlic, minced
2 1lb cans tomatoes with juice or fresh, chopped in blender
Tomato sauce or paste
1/2 tsp sugar
2 slices stale bread, soaked in milk
Chopped shallots
Bread crumbs
Grated Parmesan cheese (optional)

  1. In a skillet, brown meat.
  2. Drain and put aside.
  3. Sauté vegetables in oil until tender.
  4. Add tomatoes.
  5. Bring to a boil and simmer to reduce liquid.
  6. Add remaining ingredients, except for bread crumbs.
  7. Pour into a greased casserole.
  8. Top with bread crumbs and cheese.
  9. Bake uncovered at 350°F for 1 hour.
