By Mrs. Elmo Gautreaux. Serves 4-6.

2.5 oz sliced mushrooms
1/2 cup shallots, sliced
1 stick margarine
3 Tbsp flour
1/2 cup heavy whipping cream
2 egg yolks
3 cups crab meat
Pastry shells, small (optional)

  1. Saute shallots and mushrooms in 1/2 stick margarine.
  2. Melt 1/2 stick margarine, blending with flour until smooth.
  3. Remove from heat.
  4. Slowly add whipping cream.
  5. Whip egg yolks and slowly add to cream sauce.
  6. Fold in crab meat and shallot/mushroom mixture.
  7. Place in baking dish or pastry shells.
  8. Bake at 350°F for 20 minutes.
