Preparation time: 30 minutes | Cooking time: 40 minutes

3 tomatoes, peeled and quartered; or 1 can (14.5oz) diced tomatoes, undrained
2 Tbsp olive oil (optional)
1 medium (1/2 cup) onion, chopped
1/2 cup (1 stalk) celery, sliced thin (or equivalent flakes)
2 cloves garlic, minced (optional)
1.5 cup water
1/3 cup1 tomato sauce or paste
1 tsp sugar
1 tsp instant chicken bouillon granules
2 Tbsp fresh parsley
2 tsp lime or lemon juice
Few dashes Tabasco sauce
Parsley, croutons, paprika and Parmesan cheese for garnish

  1. If desired, seed tomatoes.
  2. In a stock pot, combine tomatoes, water, onion, celery, garlic, tomato sauce/paste, parsley, bouillon granules, lime/lemon juice, sugar and Tabasco sauce.
  3. Bring to a boil.
  4. Reduce heat and simmer for 30 minutes.
  5. Ladle into bowls, garnish and enjoy.

Large quantity:

5 cans tomatoes
7 cups water
3 medium (2.5 cups) onions
5 stalks celery (or equivalent flakes)
18oz tomato paste
10 Tbsp chopped parsley
10 tsp instant chicken bouillon granules
Juice of 1 lime or lemon, with center slices for garnish
2 Tbsp sugar
1 tsp Tabasco sauce
3 bay leaves (optional)
Paprika (optional)
